WebOct 19, 2013 · There are recipes for cider that are identical to edwort's apfelwein and when people change the yeast from a wine yeast to some other yeast, it's then a cider which uses champagne or ale yeast, or even wild yeast. But I see people calling anything with apples and honey a 'cyser' regardless of yeast.

I am 5 weeks in, and hoping that it finishes better with some age...still sitting in the primary at 1.000 now. Juices are Filsingers, 365, Traditions and Rougemont. For EdWort's Apfelwein I am trying 1118 (could not find Montrachet anywhere local) with both Rougemont and Traditions juice.
